I came across an article — more of a journal really — of a week in the life of Aldo Sohm. Sohm has won numerous awards including the Best Sommelier in the World, and the Best Sommelier of Austria FOUR times. He’s now with Le Bernardin, the fantastic fish-only, 3 Michelin starred restaurant in NYC. Wine pairing is hard enough, but just imagine doing so for a fish-only menu at that level. In this journal, you get a quick, week-long glimpse of his work life. I’m jealous.
